Some things really grab my attention on Pinterest, like a yummy-looking cookie with an awesome name. So it was with "Meltaways." So like a good pinner I followed the link and it led me to the blog Landee See Landee Do, where I found this recipe. Credit goes to this blog - you can check it out here.
I have been eyeing this one for a couple of months and decided it was finally time to try them. They are de-lish-ous! A true butter cookie with a rich cream cheese frosting.
So get your pen and paper because you are going to want to try these!
Meltaways
1 cup butter
3/4 cup cornstarch
3/4 cup powdered sugar
1 cup flour
1 recipe Cream Cheese Frosting (see below)
In a medium bowl cream butter until fluffy. Add cornstarch and sugar and blend well. Beat in flour until thoroughly mixed. Drop by small teaspoons onto baking sheet and flatten with the bottom of a glass which has been dipped in powdered sugar so it does not stick. Bake at 350 degrees for 10-12 minutes. Cool on wire rack and frost with Cream Cheese Frosting
Cream Cheese Frosting
3 oz cream cheese, softened
1 cup powdered sugar
1/2 teaspoon vanilla
Mix all ingredients together. Color with food coloring if desired.
Frost.
Grab a couple.
Sit down and enjoy.
One batch of the cookies makes about 2 dozen.
Here's what I changed or did that was not included above:
- I softened the butter ahead of time
- I used parchment paper on the cookie sheet
- Dipping a juice glass in powdered sugar worked well - one dip in the sugar worked for 2-3 cookies.
- I used a little almond flavoring rather than the vanilla when making the frosting.
- I doubled the frosting. I did have a little left over, but one batch would not have been enough for us as the frosting would have been pretty thin. If I'm going to frost I'm going to make it worth my time and effort!
These were definitely a winner.
