The other day I was trying to decide what to make for dinner. I struggle with that. I feel like I don't have enough time or energy for some recipes by the time I get off work at 4:30, and I don't always plan ahead like I should.
So I decided to crack open my Pinterest Recipe vault and find something new to try. I love chicken and spotted a recipe for Monterey Chicken I decided to make.
It did not disappoint!! The marinade gave the chicken a nice flavor that was definitely not overwhelming. And add the bacon, cheese, and barbecue sauce and it is just a perfect combination.
Monterey Chicken
Marinade
3 T. honey
3 T. soy sauce
3 T. Worcestershire sauce
5 dashes garlic
5 dashes salt
4 boneless skinless chicken breasts
1 cup of shredded monterey jack cheese
8 slices apple-smoked bacon
8 T. barbecue sauce of your choice
Mix the honey, soy sauce, Worcestershire sauce, garlic, and salt together and place chicken breasts in the mixture. Add enough water to bring the marinade up to the middle of the chicken breasts. (I put the marinade and chicken in a Tupperware container.)
OR
Mix together the marinade (as mentioned above) and place into a Zip-Lock bag large enough for all the chicken breasts. Add water until the marinade reaches the top of the chicken breasts.
Refrigerate and marinate for as close to 8 hours as possible.
Bake, broil, grill or skillet fry - whichever method you prefer. I baked at 350 degrees for 40 minutes.
While the chicken is cooking, fry up the bacon until CRISP!
When the chicken is done, top each chicken breast with 2 T of BBQ sauce, 2 strips of bacon, and 1/4 cup of shredded cheese.
Microwave, broil, or return to the oven until the cheese is melted. I returned to the oven for about 5 minutes and it was perfect.
I love that this calls for pretty common ingredients and I didn't have to run to the store to get anything to try the recipe.
I am able to share the nutrition information for this which is always a plus! Of course the numbers will vary a bit depending on the size of the chicken breast, etc., but it's nice to have an idea.
