Foodie Friday! - Mom's Lemonade Dessert

A week ago it was hot: 96, 94, with the heat index at 100 degrees.  Did I mention it has been HOT?  



While a glass of cold lemonade tastes wonderful on these hot days, what is even better is a cold, refreshing lemon dessert  my mom used to make.  



So last weekend I went to the store, got the few ingredients I was missing, and whipped up this easy, refreshing dessert.   It is mid summer and the heat is going to be around for a while, so thought I would share this so you could enjoy it too.








Lemonade Dessert

Crust:
1 package graham crackers, crushed
1/4 cup sugar
1/4 cup margarine, melted


Filling:
2 envelopes Dream Whip or 2 regular-sized Cool Whip
1 can small frozen lemonade
1 can Eagle Brand milk


Combine crust ingredients and press most in bottom of 9 x 13 pan, saving a few crumbs for the top.  Prepare the Dream Whip per package instructions.  (I use Cool Whip.)  Stir the the frozen lemonade and Eagle Brand milk together until well blended, then fold in Cool Whip or Dream Whip.  Pour and spread filling over crust. Sprinkle with remaining crust mixture.  



Refrigerate.



What I did differently:
I made two 8 x 8 pans rather than one 9 x 13 pan, so it was not as thick as it would have been in a 9 x 13 pan.    I also was anxious to cut into it, so didn't refrigerate as long as I should have.



Yep, impatient.


Also, I have been unable to find small cans of frozen lemonade (as in the olden days), so I picked up a large can and just used half.  


So on a hot day make this for a refreshing treat.

  1. Sounds yummy. Have not ate anything with Eagle brand milk in it yet :-( thinking that might just be too much sugar. Might make this for the kids though when I head to Iowa. The boys would love it!
