Foodie Friday! - Scones

Today I thought I would share the scone recipe that I use.  They are Grandma Johnson's Scones found on the allrecipes.com site.





Grandma Johnson's Scones

1 cup sour cream
1 teaspoon soda

4 cups flour
1 cup sugar
2 teaspoons baking powder
1/4 teaspoon cream of tartar
1 teaspoon salt
1 cup butter
1 egg
1 cup raisins (optional)


Combine sour cream and baking soda.  This mixture will rise as you work with the dough, so use about a 2-cup container.  Set aside.

Blend flour, sugar, baking powder, cream of tartar and salt.  Cut in butter and add egg.  (I use my KitchenAid mixer, but don't overbeat).  Add raisins and mix.   Knead the dough briefly.  Roll with rolling pin to 3/4" thickness - round shape.  Cut like pizza slices.  Place on greased, large baking sheet (use parchment paper or a Silpat mat). Brush with egg white and sprinkle with sugar.  Bake at 350 degrees for about 25 minutes until just starting to brown.

This recipe is very flexible.  Here's what I do:

I use half of the dough and mix in fresh blueberries (gently), some will break especially with the rolling process.  I use mini chocolate chips in the other half of the dough.  The recipe actually says to bake 15 minutes, but mine always take about 25 minutes, so it will depend on the thickness.
