I saw this post from a Facebook friend and didn't have time to look at it further. Then over the weekend I waded through days of FB posts to find it as I couldn't remember who posted it - I was that determined to find it!
And it was well worth the time as these are awesome! Michael said, "They taste just like a cinnamon roll!"
So please try these if you haven't already and let me know what you think. I don't recall the name for them, so I call them Cinnamon Roll Pancakes.
Cinnamon Roll Pancakes
Pancakes:
4 cups flour
8 tsp baking powder
2 tsp salt
4 cups milk
4 T vegetable oil
4 large eggs - lightly beaten
Combine pancake dry ingredients. Add wet ingredients and blend so there are still some lumps.
Cinnamon Filling:
1 cup butter, melted
1-1/2 cups packed brown sugar
2 T. cinnamon
Combine all ingredients and put in a Ziploc sandwich bag. Cut the tip off so you can pipe filling onto the pancakes.
Cream Cheese Glaze:
1/2 cup butter
4 ounces cream cheese
1-1/2 cups powdered sugar
1 tsp vanilla
Melt butter and cream cheese in microwave, stir to blend. Add powdered sugar and vanilla. Add some milk as needed to make a glaze consistency.
Heat griddle to 325 degrees. Cooking the pancakes at too high of a temperature can cause the cinnamon filling to burn. I have a glass-top stove and put my burner at just past 4 and that worked well.
Pour pancake batter into pan when heated. Pipe some cinnamon filling onto the pancake. Let the pancake get very bubbly on top before turning. The cinnamon filling will melt some as it cooks. Flip when ready. The first pancake takes longer than subsequent ones - I think some cinnamon filling remaining in the pan helps subsequent pancakes cook quicker.
The cinnamon filling creates "craters" in the pancake which are perfect for the glaze to settle into when plated.
Top with the cream cheese glaze.
I made a half batch since there are only 2 of us. It made about 7 pancakes the size above (shown on a salad plate).
Michael said I could make these every weekend.
Our diets say "no."
But do treat yourself and enjoy!
