While going through my Forshee cookbook again I found an old recipe of mine that I love but have not made in ages. It's funny how you forget about some recipes over time.
So today I am sharing my recipe for English Muffin bread.

English Muffin Loaf
5-3/4 cups flour (I need less)
2 pkg, yeast
1 tsp sugar
2 tsp salt
1/2 tsp soda
2 cups milk
1/2 cup water
cornmeal
Combine 3 cups flour, yeast, sugar, salt, and baking soda - stir well to mix. Heat water and milk to simmering (120 degrees). Add water and milk to dry ingredients, beat well. Stir in enough flour to make a stiff batter (about 1 cup). Grease and sprinkle cornmeal into 2 loaf pans -whatever amount you would like on the top of the loaves when done baking. Lightly spoon dough into pans. Cover and let rise 45 minutes. Bake at 400 degrees for 25 minutes. Makes 2 loaf pans.
I love that it makes 2 loaves - one for you and one to share.
