This has been one of those weeks where we have done a lot of running after work which also means little cooking, baking, etc., so on Wednesday I was trying to figure out what to make for Foodie Friday. I looked on my Pinterest Recipe board for some suggestions. Wouldn't you know it, after Michael and I gave up chocolate for Lent, it seemed like every recipe I looked at was chocolate!
So I had to get creative and make something nonchocolate. I looked at a few recipes but they were either too time consuming or couldn't top all the chocolate I had been looking at on Pinterest. Until.... I looked in my own recipe book and spotted our favorite fruit pizza recipe.
And I had all the ingredients!
Bonus!
Michael wanted to name this, "We Gave Up Chocolate For Lent So This Was The Next Best Thing," but thought the title was a little long. I actually got this recipe from Tastefully Simple. We love the flavor, and right now when we are so tired of winter and anxiously waiting for spring, even the color of the fruit was a welcome sight.
Easy Key Lime Fruit Pizza
1 tube refrigerated sugar cookie dough
1 box Tastefully Simple Key Lime Cheese Ball Mix
8 ounces soft cream cheese
1 T. milk
4 ounces marshmallow creme
Fruits of your choice
(I used strawberries, grapes and blueberries)
I soften the cookie dough just a bit, then cut into slices and lay in the bottom of a greased small jelly roll pan. I then press the cookies together to form a crust and also push a little dough up the sides of the pan a bit. Bake as directed on the cookie package; set aside to cool.
Using an electric mixer, combine the key lime mix packet with the softened cream cheese. Blend well. Add milk to thin out the mixture just a bit. Then add in the marshmallow creme. I use the mixer to incorporate the marshmallow creme as well. Spread this mixture on the cooled crust. Top with your favorite fruits. Sprinkle the second package in the Key Lime Cheese Ball Mix box (graham cracker crumbs) over all. Refrigerate, slice, and serve.
If you aren't familiar with Tastefully Simple, here is what the Key Lime Cheese Ball Mix looks like:
You can order it online from any consultant.
Happy Friday!
