Foodie Friday! - Crockpot Brown Sugar & Balsamic Glazed Pork Loin

Last week our crockpot was keeping us well fed!  It was a week of appointments and errands and with little time to cook it was time to find a new crockpot recipe to try.

This one sounded really good and it was!  I found this recipe here.




Crockpot Brown Sugar & Balsamic Glazed Pork Loin

1, 2-pound pork loin
1 tsp. ground sage (I omitted this)
1/2 teaspoon salt
1/4 teaspoon pepper
1 clove garlic 
1/2 cup water

Glaze
1/2 cup brown sugar
1 T. cornstarch
1/4 cup balsamic vinegar
1/2 cup water
2 T. soy sauce

Place pork in crockpot and add 1/2 cup water.  Combine sage, salt, pepper and garlic and rub over pork loin.  Cook on low for 6-8 hours. 

About 1 hour before the pork is done combine all glaze ingredients in a small saucepan.  Heat and stir until mixture thickens.  Brush the pork with the glaze 2 or 3 times during the last hour of cooking.  Serve with remaining glaze on the size.  

NOTE:  When I was making the glaze the vinegar really smelled strong. In fact, once made we were not even going to use the glaze.  I did not brush it on the pork while in the crockpot as the directions read, instead I decided to try it on a small piece of the pork.  Both Michael and I were amazed at how wonderful the glaze tasted!  We ended up drizzling the glaze over the meat once plated and were pleasantly surprised at how amazing it tasted.  So don't let the strong vinegar smell scare you.  It has a deeper soy sauce/teriyaki type flavor.  I think it would have looked and tasted more "glazed" if I had followed the directions and basted while still in the crockpot.

Rather than a clove of garlic I used Tastefully Simple Garlic Garlic.
