Wednesday night I was trying to decide what recipe I would share today. I haven't spent much time in the kitchen this week, at least not making anything new and different. Our nights have been pretty busy and I have been making some of our favorite standby meals.
So after dinner I grabbed the Kindle with my All Recipes app to figure out what to try. I told Michael we had blueberries I needed to use and asked him what sounded good. Without hesitation he said, "Blueberry Custard!"
Well we both knew there was no such thing as blueberry custard so I decided to find a recipe based on these three parameters: blueberries, a dessert, and 45 minutes or less.
Can you guess what recipe popped up in the search I generated?

So Blueberry Custard it was! I found the recipe here.
Blueberry Custard
3 T. butter
8 eggs
1/4 cup honey
2-1/2 cups milk
1 tsp vanilla extract
2/3 cup all-purpose flour
1/2 tsp. salt
1 cup fresh blueberries
1/2 tsp ground nutmeg
3 T. powdered sugar for dusting
Preheat oven to 425 degrees. Place the butter in a 9 x 13 inch baking dish and place dish in oven to melt butter.
In a blender combine eggs, honey, milk, vanilla, flour, and salt. Blend until smooth. Pour over melted butter in hot dish. Sprinkle blueberries on top.
Bake in preheated oven 20-25 minutes until puffed and golden. Sprinkle with nutmeg and powdered sugar. Makes 8 (large) servings.
I didn't use a blender. I just used a whisk and whisked really well to blend all the ingredients.

I couldn't believe how quick and easy this was to make. It tasted wonderful warm, but was just as good chilled. The blend of blueberries and vanilla is just perfect. Instead of sprinkling with powdered sugar you could drizzle maple syrup over it or a blueberry compote.
And you thought there was no such thing as blueberry custard!
