Foodie Friday! - Peanut Butter Oatmeal Breakfast Cookies

I know breakfast is the most important meal of the day, but morning is often the time of day that can be most hectic.  Whether you are trying to get ready for work, getting kids ready for school and out the door, or simply trying to wake up, it isn't always easy to find the time or energy for something nutritious for breakfast.  

I found this recipe and was so excited!  First of all, who doesn't love the idea of a cookie for breakfast?  And I love peanut butter and oats!  I thought this sounded like a tasty, portable, quick breakfast so made a batch right away and was not disappointed!

Peanut Butter Oatmeal Breakfast Cookies

1/2 cup brown sugar
1/2 cup milk
2 T. butter, melted
2 eggs
2 tsp baking powder
3/4 tsp salt
2 tsp vanilla
1/2 cup peanut butter or peanut butter substitute

Combine the above ingredients and blend well.

Add:  3 cups instant oats (use gluten free oats if gluten free fits your dietary needs)

Blend again.

Add: 1/2 cup chocolate chips (optional)


The batter will be very moist and your first thought will be you need to add more oats, but don't!




  I used a 1/4 measuring cup and dropped the cookies onto a baking sheet lined with parchment paper.  The dough was sticky, so they didn't always drop willingly. 





I then used the bottom of the measuring cup to flatten and shape the cookies a bit.  Bake at 350 degrees for 11-12 minutes.  Let cool for 5 minutes, then move to a wire rack.  


I made 15 larger cookies from this batch, but make them whatever size works best for you.

I edited the recipe on the above site and by omitting the chocolate chips it would lower the calories per cookie to about 146, and decrease the sugar as well. It is fun to be able to edit a recipe and see what you can do to make it healthier and fit your needs.  

I love that these cookies are a fun way to get in a grain and some protein.

Plus, they taste really really good!  

I have had them for breakfast each day this week. I keep them in the freezer and take one out when I am ready to eat.  Because they are so moist they really are able to be eaten right from the freezer, and within just a few minutes are room temperature.

I think next time I will try adding nuts to increase the protein a bit.  I think you could add about any mix-in you wanted instead of or in combination with the chocolate chips:  nuts, coconut, raisins, etc.
