When I asked the kids and grandkids what cookies and treats they wanted for Christmas, one son-in-law said, "Snickerdoodles!" They are his favorite cookie. I have never made Snickerdoodles for Christmas... until this year. It may just become a holiday tradition - because having their favorites is what it is all about!
So if you are looking for a good classic cookie, look no further.
Snickerdoodles
1 c. soft shortening
1-1/2 cup sugar
2 eggs
2-3/4 cups flour
2 tsp. cream of tartar
1 tsp soda
1 tsp salt
2 tsp sugar
2 tsp cinnamon
Mix shortening, sugar and eggs thoroughly. Add flour, cream of tartar, soda and salt together. Mix well to blend all ingredients. Form small walnut-sized balls. Combine sugar and cinnamon. Roll balls in mixture. Place 2" apart on greased cookie sheet (I use parchment paper). Bake at 400 degrees for 8-10 minutes or until light brown, but still soft. Cookies puff up at first, then flatten out with crinkled tops.
Snickerdoodles take me back to my childhood. They are timeless and seasonless.
Happy Friday!
