It is always fun to try new recipes, but many times the ones I love the most are those I grew up with. Growing up in a small town, recipes were shared among neighbors, friends, church circle groups, coworkers, and family and then became favorites of the next generation.
This is one of those recipes. I remember my Mom making these bars for us at home, for church circle, etc. I have been pulling out some recipes that I have not made for a while and making them. What a treat it is!
With ingredients of oats, chocolate, and caramel, what's not to love about this easy bar recipe?! And except for the caramel, I usually have all the ingredients on hand.
(Makes you want to dive in, doesn't it?)
Oatmeal Carmelitas
1 cup flour
3/4 cup brown sugar
1/4 tsp salt
1 cup oats
1/2 tsp soda
3/4 cup Crisco
Using mixer, combine above ingredients and press 1/2 of the mixture in bottom of a greased 9 x 9 square pan. Bake at 350 degrees for 10 minute.
While baking crust: Measure out 1 cup of chocolate chips.
Combine 3/4 cup caramel ice cream topping with 3 T. flour, whisking together.
Remove crust from oven after 10 minutes. Sprinkle chocolate chips over crust. Pour caramel/flour mixture over chocolate chips. Sprinkle other 1/2 of crust mixture on top of all.
Return to oven and bake 15-20 minutes more until golden brown.
Chill for easy cutting - or if you like gooey, don't chill :)
