Foodie Friday! - Homemade Freezable Biscuits


There are times when it would be nice to make a couple of rolls or biscuits with a meal.  Most of them in the store come with more than two of us can or need to eat.  There are some that are packaged for smaller families and I have bought those before, but I saw this recipe on Pinterest and thought it was the perfect answer to those times when just a couple of biscuits are needed.






Homemade Freezable Biscuits

2 cups flour

1 T. baking powder

1/2 tsp salt

1/2 cup shortening

3/4 to 1 cup milk

Combine dry ingredients.  Cut in shortening and blend in milk.  I used my Kitchen Aid mixer with the dough hook until the flour was blended in , being careful not to overblend.

Roll out on floured surface to desired thickness.  Cut with biscuit cutter.  Bake at 450 degrees for 8-12 minutes if baking right away.  Place extra biscuits in freezer safe bag, separating by wax paper.


From frozen bake about 12 minutes.


The recipe also indicated if you are baking something else at the same time at 350 degrees, the biscuits can be baked for about 15 minutes, so it sounds like they are very flexible regarding baking temperature, just bake until golden brown.


I got 12 biscuits from 1 batch, but it has been a while since I made biscuits, so next time I would make them thicker - probably getting 6-8 out of a batch.   I would also double the batch so I have even more to freeze.



The taste was wonderful!  Growing up we had biscuits and always had butter and grape jelly on them. So when I had mine, that is exactly what I did.  It was a little bit of heaven.
