Foodie Friday! - My Dad's Vegetable Beef Soup

When I was growing up my Dad would make vegetable beef soup.  He used to make noodles from scratch.  I can remember him rolling them out, cutting the noodles, and letting them dry. It was a process, but it was so worth it! He made the best soup ever.


In the very early 1990s my sister put together a family cookbook. It has bios of each family member, some of their favorites, and recipes from everyone.   I go to it often for my sister-in-law's lasagna recipe, etc.  But it had been a while since I had really LOOKED at it.  I'm still working quite a bit of overtime and my time in the kitchen has been minimal  this week.  With the weather getting so cold I was thinking of my Dad and his soup... and I thought "I wonder....?"

Sure enough - Dad's Vegetable Soup was in the cookbook!   So I'm going to share, in my Dad's words, his soup recipe.  


Don's Vegetable Beef Soup

1 pkg stew meat 
1 onion diced
1 cup diced celery
3 beef bouillon cubes
Diced potatoes
Sliced carrots
Noodles

Put these ingredients in soup pan.  Add water and cook until beef is tender.  Add diced potatoes and carrots.  Add noodles last.  You can put all these ingredients in a slow cooker as well.  Salt and pepper to taste.


When I was reading through the recipe I had to smile, because this is exactly how my Dad would have described the recipe.  I plan to make some this weekend.  I usually want specifics... how much???, but I don't think I can mess it up.


The only thing that would make it better would be Dad's homemade noodles instead of Reames


And sitting down to a bowl of it with him.

NOTE:
I made this soup after posting my blog.  Here are a few more details in case you like measurements, like me!

I used 2 lbs of stew meat
2 cups of carrots
2 cups of potatoes
I used about 1/3 jar of beef granules (which would equal a lot more bouillon than Dad used) - adjust to your taste
1/2 pkg Reames frozen egg noodles

I added a few more cups of beef broth to it after the first eating as it needed more liquid added once it cooled and was ready to go in the fridge.
