I'm not known for my patience. One night after dinner Michael teasingly asked me what was for dessert. I had nothing made - we don't do desserts as often as we used to. The more I sat and thought about it the more I wanted chocolate pudding. I was going to make some the old fashioned way, then remembered this recipe, so got my recipe book out and in less than 10 minutes we were enjoying hot chocolate pudding!
Microwave Chocolate Pudding
1/3 cup sugar
1/4 cup cocoa
3 T cornstarch
1/8 tsp salt
2 cups milk
1 tsp vanilla
Combine first 4 ingredients. Stir well to blend. Stir in milk until there are no lumps. Microwave on high for 3 minutes (I use a 2-qt Pyrex batter bowl). Stir. Cook 4-6 minutes more, stirring after each minute, until the pudding is thick.
When thick stir in vanilla.
This makes 4 servings.
