Foodie Friday! - Tortilla Rollups

Our Christmas with our kids had to be put off until better traveling weather, so this Saturday we will finally be having the first of three Christmases with our kids! 
When I asked everyone what their favorite food was that we had for Christmas, our grandson Jacob said Tortilla Rollups.  So  I thought I would share the recipe for these great appetizers.  I will be making them tonight for our Christmas tomorrow.

Tortilla Rollups
1 pkg large flour tortillas (have a second pkg on hand)
2 - 8 oz pkg cream cheese, softened
1/3 c. mayo or Miracle Whip
1 pkg Hidden Valley Ranch Seasoning (original)
3 pkg thin sliced ham lunchmeat, diced (I use Carl Buddig)
3 pkg thin sliced turkey lunchmeat, diced
1 green pepper,  diced
shredded cheddar cheese
milk
Mix  cream cheese, mayo, and Hidden Valley Ranch with a mixer until well blended.  Add milk to make it a consistency that will spread easily.  I don't measure this, but probably add 1/4 to 1/3 cup.  
Spread a thin layer of the cream cheese mixture on each tortilla.  Sprinkle each tortilla with the diced meats, green pepper, and shredded cheese.  Tightly roll up tortilla and wrap in Saran Wrap. 

Repeat the process until you have used all ingredients,
I usually have extra cream cheese spread in the end - that is why you may want to have a second package of tortillas on hand.
Refrigerate overnight.  Remove from refrigerator and cut off the ends of each tortilla where there is not much filling.   Cut the remainder of the tortilla cinnamon roll style, cutting into approximately 1-inch rolls. Plate, cover with Saran Wrap again, and return to refrigerator until ready to serve. 
These are wonderful and a nice change from all the sweets usually on hand at the holidays.
