We had this cake Christmas Day.... with tacos. It was an unusual pairing, but both were awesome!
This recipe is from my Betty Crocker Cookbook I got in 1980. I had forgotten about this recipe and haven't made it in a long time, then thought about it over the weekend and it was every bit as good as I remembered. It mixes in the pan, is very quick and easy to make, and makes its own hot fudge sauce.
Hot Fudge Sundae Cake
1 cup flour
3/4 cup sugar
2 T. cocoa
2 t. baking powder
1/4 t. salt
1/2 c. milk
2 T. vegetable oil
1 teaspoon vanilla
1 cup chopped nuts (optional)
1 cup packed brown sugar
1/4 cup cocoa
1-3/4 cups hottest tap water
Heat oven to 350 degrees. Mix flour, sugar, 2 T. cocoa, baking powder, and salt in an ungreased 9 x 9 square pan. Mix in milk, oil, and vanilla until smooth. Stir in nuts. Spread evenly in pan. Sprinkle with brown sugar and 1/4 cup cocoa. Pour hot water over batter.
Bake 40 minutes. While warm spoon in dessert dishes and top with ice cream. Spoon sauce from pan onto each serving.
Happy Friday!
