Foodie Friday! My Favorite Things Bars

This recipe is just too quick, easy, and wonderful not to share.  I don't remember the official name for these, but because they  have my favorite things in them (oats, peanut butter, chocolate, and brown sugar), I decided to name them My Favorite Things Bars.
My Favorite Things Bars
Crust
1 cup butter, melted
1 cup brown sugar
4 cups instant oatmeal
Combine crust ingredients and pat onto greased cookie sheet.  It will appear it isn't moist enough, but it is fine :)

Use a large cookie sheet as the crust will spread some when baking, so do not put too close to the edges of the cookie sheet.  I patted mine thin the first time around - next time I would probably leave the crust a little bit thicker.
Bake at 425 degrees for 10 minutes.
While the crust is baking melt:
1-1/2 cups of chocolate chips
3/4 cup peanut butter
in a medium saucepan over low heat.
When crust is done spread chocolate/peanut butter mixture on top.
Sprinkle toffee chips on top (no specific amount).
Cut into pieces and enjoy!
I got this recipe from our daughter-in-law Melissa, who got it from her grandmother, Jackie Andersen.
Thanks to both for sharing it!

Happy Favorite Things and Happy Friday!

  1. Thanks Barb, This looks like the treat for when the kids come up for Thanksgiving. Was looking for a sweet the boys would like and this will definitely be it!
