Foodie Friday! - Goulash

In my attempt to try new recipes this year I decided to try the goulash recipe in my Hy-Vee Seasons Comfort Food Cookbook.  This recipe is just a bit different from what  I grew up with, but amazingly tastes just like the goulash my mom made!

It is windy, cold, and snowing out this evening so hot comfort food sounded like a perfect way to end the day.



Goulash  

2 pounds lean ground beef
2 large onions, chopped
3 cups water
 1 - 29 oz can tomato sauce
2 - 14.5 oz cans Italian diced tomatoes
3 cloves garlic, minced
3 bay leaves
3 T.  soy sauce
1 T. Italian seasoning
1 T. season salt
2 cups uncooked elbow macaroni

Brown hamburger in dutch oven.  Saute onions in beef until tender.  Drain off any grease.  Add water, tomato sauce, tomatoes, garlic, bay leaves, soy sauce, Italian seasoning, and season salt.  Cover and cook 25 minutes.

Stir in uncooked macaroni; cover and simmer over medium-low heat for 20 minutes.

Remove dutch oven from heat.  Let stand 30 minutes covered.  Remove and discard bay leaves before serving.  

According to the cookbook this makes 9 servings at 1-1/2 cups each.

What I did differently:

I add onion to taste - I went light on the onion 
I used plain diced tomatoes rather than Italian seasoned 
I used 1 T. of Tastefully Simple Garlic Garlic rather than cloves of garlic
I omitted the bay leaves
I used light soy sauce
I omitted the Italian seasoning (not a big fan of Italian seasoning)


This was so easy to make and I loved that the macaroni just cooked as it simmered - one less step! Saturday looks to be a snowy, windy morning, so it would be a great time to make a pot of goulash!
