Foodie Friday! - Crockpot Scalloped Potatoes & Ham

It sure has been cold this winter!  I know, it is winter after all, but we have had some really really cold spells with dangerously low wind chills in the last month.  Even though I don't have to venture out to go to work, I like to have comfort food waiting for Michael when he gets home.  And I have to admit, I like the comfort food too.

Wednesday was such a day so before work I put this in the crockpot so we could have a good hot meal in the evening with very little work.  I love scalloped potatoes and ham. My mom's recipe (here on my blog also) is my favorite, but if I am short on time this one fills the bill!

This recipe is from the Clear Lake Firehouse Cookbook and was submitted by Cindy Kunz.


Crockpot Scalloped Potatoes & Ham

1 lb pkg diced ham (add more if you prefer)
8-10 potatoes, peeled and thinly sliced
Onion, diced, to taste
Salt and Pepper to taste
1 cup grated Cheddar cheese
1 can cream soup (mushroom, celery, or chicken)

Put half of the ham, potatoes, and onion in crockpot.  Sprinkle with salt and pepper, then top with grated cheese.  



Repeat with remaining ham and potatoes.  Spoon undiluted soup over the top.  Sprinkle with salt and pepper. 




 Cover and cook on low for 5 hours.    




I don't add salt to this recipe.  Between the soup, ham, and cheese there is enough salt/sodium to give it wonderful flavor, but I do use pepper to season it.  
I have used both cheddar cheese and shredded Velveeta, depending on what I have on hand.  

The original recipe says to cook on low for 8-10 hours, but mine is always ready at about 5 hours.  If you want to make a larger batch increase the cooking time.
