Last Saturday was Neighbor Day so we made Monster Cookies and delivered to our neighbors who were home. What's not to love about a Monster Cookie? Peanut butter, oats, chocolate chips, M & Ms, it just doesn't get much better than Monster Cookies.
So here is the recipe I use.
Monster Cookies
1 cup butter
3 cups peanut butter
1-1/2 teaspoons corn syrup
1-1/2 teaspoons vanilla
2-1/2 cups packed brown sugar
6 eggs
2 cups white sugar
4 teaspoons baking soda
9 cups quick oats
9.4-oz pkg M & M's
12-oz pkg semi-sweet chocolate chips
Preheat oven to 350 degrees. Cream first 8 ingredients. Add oats and blend well. Stir in the chocolate chips and M & M's. Drop by tablespoons on cookie sheet with Silpat mat or parchment paper. Bake 10-12 minutes. Do not overbake! Remove from oven and let cool on the pan for a few minutes as they will set up as they do.
I make a half batch and get about 65 regular-sized cookies. I do roll the cookies into balls and flatten a bit like a hamburger patty so they bake evenly.
One of our neighbors asked for the recipe, so I thought it would be a great one to put on my blog. Her daughter Lilly (I think now 3) liked them so much she was trying to hide them behind the couch so there would be some left over for breakfast. Luckily even a half batch makes enough that you won't need to hide them behind the couch to make sure you don't run out.

Um, my sweet tooth has been out of control lately. This doesn't help!!! I LOVE monster cookies.
