Like you, I have seen a lot of recipes crop up on Facebook lately. My son, Tom, says it is becoming Food Network :)
I am guilty of writing a LOT of these recipes down and even trying some of them.
Yesterday Rachel Mack posted a recipe for a Single Chocolate Chip Cookie. Yep, I am calling her out on it because I ended up getting up and making one shortly after. Michael was out taking pictures and I was on my own for dinner and I thought a single chocolate chip cookie sounded like a wonderful meal.
I know, a cookie for dinner is nuts. But there was an egg in the recipe so I did get some protein.
I have to admit, I have tried the cake in a mug recipes and was not impressed, but this recipe is pretty good!!
So here goes.
Single Chocolate Chip Cookie
1 T. melted butter
1 T. white sugar
1 T. brown sugar
3 drops vanilla
pinch of salt
1 egg yolk
1/4 cup flour
2 T. chocolate chips
I melted the butter in a ramekin and stirred in the other ingredients until well blended.
Microwave on high 40-60 seconds. If you use something a little larger than a ramekin you will get a thinner cookie. Mine was thicker and I microwaved it 60 seconds.
This was a nice, quick treat. The only thing that would have made it better is a scoop of ice cream on top.
But that would have been just plain crazy!
