Last week I posted the recipe for my Dad's Beef-Noodle Soup. Today I thought I would share his recipe for the noodles.
Don's Homemade Egg Noodles
3 egg yolks or 3 whole eggs
3 T. cold water
1 tsp. salt
2 c. flour
Beat eggs. Add water and salt. Stir in flour. Knead in last of flour. Roll as thinly as possible on floured board (he always used the kitchen table). Roll up like a jelly roll and cut into strips. Spread out on counter and allow to dry. Can be stored in a covered glass jar.
He made wonderful noodles so if you decide to try this recipe I would love to hear what you thought of them.
