When I found the Booyah! Chocolate Chip Cookie recipe this one was listed nearby. It was from a section of the Fairmont Sentinel that my mom had saved - dated 1981! The Sentinel used to (maybe still does?) have recipe contests each year and would print a cookbook with the best recipes.
I had this recipe in the past and somehow lost it. I hadn't made these cookies in decades. So when I spotted it again I was anxious to try them. The recipe was from Mrs. Richard G. Olson of Armstrong.
White House Cookies
2 sticks margarine
1 cup white sugar
1 cup brown sugar
1 cup vegetable oil
1 egg
1 teaspoon vanilla
3-1/2 cups of flour
1 teaspoon baking soda
1 teaspoon cream of tartar
1 cup Rice Krispies
1 cup oatmeal
1 cup coconut
Mix together margarine, sugars, and oil. Add egg, vanilla, flour, soda, and cream of tartar. Fold in Rice Krispies, oatmeal, and coconut. Bake for 10 minutes at 350 degrees. (Mine took 12 minutes) I used a Silpat mat and parchment paper.
When I posted about this recipe on Facebook I was surprised at how many different names these cookies have, but no matter what you call them, they are wonderful!
I will be scouring through Mom's binder of recipes to see what other long lost treasures I can find!
