Foodie Friday! - THE Lemon Bars

These are some of my favorite bars. My mom made them all the time.  I've tried several recipes but none were exactly like my mom's until I got this recipe.  They were made by our daughter-in-law's grandmother - a recipe she found in a church cookbook OF COURSE!  When she brought them for our Father's Day get together and I saw them I was so excited!  She shared the recipe and I couldn't make them fast enough.

I'm sure you have had them before, but if you have lost the recipe like I did... enjoy :)

Lemon Bars

Crust
2 cups flour
1 cup butter
1/2 cup powdered sugar

Mix like pie dough and pat into a 9 x 13 greased pan.  Bake 20 minutes at 325 degrees.

Filling
4 eggs, beaten
2 cups sugar
4 T. flour
6 T. lemon juice

Mix and pour over baked crust and bake 25 minutes more at 325 degrees.

When cool, dust lightly with powdered sugar.

These freeze very well, just wait to add the powdered sugar when you remove from the freezer.

It's awesome when such a simple thing can make you feel so warm and fuzzy!!

Thank you Melissa and Jackie for sharing this recipe!
