Foodie Friday! - Blueberry Pancake Bake

I like pancakes, but dislike making them for two reasons:  I usually make a mess on the stovetop and I feel like I am standing there forever making pancakes instead of sitting down and eating with my husband.  I spotted this recipe for baked pancakes and thought it looked like a great one to try!  I found the recipe here.  

Once in a while we enjoy having pancakes for dinner.  Last night was one of those nights.  So I dug out this recipe and tried it.  While it does not turn out quite as fluffy as typical pancakes, it was wonderful, moist, and delicious!  We both loved it and I will definitely be making it again!  




Blueberry Pancake Bake

3/4 cup milk
2 T. melted butter
1 large egg
1 T. sugar
1 cup flour
2 tsp. baking powder
1/4 tsp. salt
Fresh blueberries (optional)

Preheat oven to 350 degrees.  Lightly grease an 8 x 8 baking dish.  In a mixing bowl combine milk, butter and egg.  Whisk together to blend well.  Then add the sugar, flour, baking powder and salt. Stir to blend the dry ingredients in completely. Pour batter into greased baking dish.  Sprinkle fresh blueberries into the batter. 




 Bake for 20-25 minutes.  It was done at 20 minutes (check with a toothpick), but I left in another 5 minutes to brown it just a bit.  Cut and serve. 

You can double this and bake in a 9 x 13 pan. I had initially planned to put blueberries on part of the batter for Michael, and chocolate chips on the rest of the batter for me.  Just as I was opening the refrigerator to get out the blueberries and chocolate chips, I remembered that I had given up chocolate for Lent (sigh) so I had to skip those and use blueberries only.    I have to admit though, they tasted wonderful!

Break the breakfast (or dinner) mold and rethink your pancakes.  Life is too short to be cleaning the stovetop or missing out on eating with your family if you don't have to!
