Foodie Friday! - Not Your Mother's Meatloaf

I saw this recipe on Pinterest (where else) and thought I would give it a try.   I was wondering, "Why didn't I think of that?"  I have no clue what the real name for the recipe is,  but it is definitely "Not Your Mother's Meatloaf" so that is what I am calling it.


This is such a quick and easy meatloaf recipe.



Not Your Mother's Meatloaf

1 lb ground beef or ground turkey
1 box of Stove Top stuffing mix
1 egg
1 cup water



Put all ingredients in a mixing bowl and blend well.  Place in a greased loaf pan.  Bake at 350 degrees for 45 minutes.  The stuffing mix gives the meatloaf a wonderful flavor.  Serve with gravy and mashed potatoes.


I made this with ground beef.  I have to be honest.  I made it on my lunch (30 minutes) and after putting it in the loaf pan I did what I always do with meatloaf - top it with a mixture of catsup, brown sugar, and a hint of mustard.  


Trust me. Do not do this.  Step away from the meatloaf before doing the saucy topping and serve with gravy on top when plated.  Old habits are hard to break. 


This was a nice change from the traditional meatloaf I usually make.  So try it  for something different...and quick....and easy.
