Foodie Friday! - Donuts!!

Okay.  Easy takes on a whole new meaning this week!  But since I am commuting right now, it is what it is! 

Three weeks ago I bought a Babycakes Donut Maker.  I hadn't planned to, it is one of those things where you can only believe someone took over your body and the next thing you know you are the owner of a donut maker. 

Or it could have something to do with my husband's sudden craving for blueberry donuts.

So it was finally time to try this out and see how it worked.  I opened up the booklet that came with it which had several recipes.  Most of the recipes made 2-3 dozen donuts, much was way more than we needed, so I looked online to see if you could use a prepackaged muffin mix instead. 

The reviews online for the recipes in the book were not good (glad I read that first), and people were using cake mixes and muffin mixes instead (adding a bit of flour to the muffin mix to thicken it up). 

So here's what I did.

Blueberry Sour Cream Muffins

1 package (Betty Crocker packet size, not box) blueberry muffin mix
1/3 cup of sour cream (approximate)
1/3 cup of milk (approximate)

I whisked the ingredients together so it made a thick batter.  The packet called  for 1/2 cup of milk to make muffins.  I thought the sour cream would thicken it up a bit and add extra flavor, then added milk so it was a thick dough. 

I put the batter in a gallon freezer bag and cut off one corner to pipe about 2 T of dough in each donut well once the donut maker was ready. 

Bake for 5 minutes. (Yes, BAKED not fried!) 

Put on wire rack.  While hot, I then put in another freezer bag with about 1/2 cup of sugar, and shook until they were coated. 

They were fun to do.  We got about 15 donuts out of the packet of muffin mix.  They are bigger than the ones you get at the state fair, but not a large donut at all. 

It will be fun to do this with the grandchildren!
