Foodie Friday! - Chocolate Peanut Butter Bars

This is a recipe I got from our daughter-in-law Melissa.  She made these when we were there for Father's Day and they are wonderful!  There are many things I love about this recipe:   they mix up in a batter bowl, have very few ingredients, take just a few minutes, and taste awesome :)

Life just doesn't get much better than that!


Chocolate Peanut Butter Bars

1/2 c butter
1-3/4 c. powdered sugar
1 c. peanut butter
3/4 c. graham cracker crumbs

Melt butter on low (I used my large batter bowl and melted in the microwave). Stir in powdered sugar.  Add peanut butter and graham cracker crumbs. Stir until creamy.  Spread in a sprayed 8 x 8 pan - patting evenly.

In the same batter bowl make the frosting:

Melt 1/4 c. butter
Add 1/2 c. chocolate chips

Again, I did this in the micowave.  I stirred the chocolate chips in after melting the butter, allowing the butter to melt them some.  I then microwaved for 1 minute at a power level of 3, and stirred until the chips were completely melted and the frosting smooth.  Pour over bars, spread to cover.  Refrigerate for 30 minutes then cut into bars.

Both Melissa and I doubled the recipe and used a 9 x 13 pan.
