Foodie Friday! - Chicken & Stuffing Bake

Chicken is one of my favorite sources of protein as it is so versatile.  Here is an easy chicken and stuffing dish.  Just add a vegetable and you have a complete meal.  Enjoy!




Chicken and Stuffing Bake

You'll need:

4 boneless, skinless chicken breasts

Swiss cheese (slices or shredded - optional)

1 can cream of chicken soup

1/2 cup of milk

1 package Stove Top Stuffing Mix

1 stick margarine


Place the chicken breasts in a baking dish  - 9 x 13 is what the recipe calls for.  This seems a bit big to me for a single recipe so I use a deep 9-inch round dish.  If you want to add the cheese, lay slices or shredded swiss cheese on the chicken. 

I usually use 3 chicken breasts as 4 is too many for us.


In a saucepan combine the cream of chicken soup and 1/2 cup milk.  Stir together and heat just to warm, whisking to blend.


Pour the soup/milk mixture over the chicken.  Salt and pepper as desired.



Sprinkle dry stuffing mix over the top. 


Drizzle the stick of melted margarine over the stuffing mix. 



Cover with foil.  Bake at 350 degrees for 50 minutes.  Remove the foil and bake another 5 minutes.




This recipe results in really moist chicken, has a wonderful flavor, and is quick to put together.
