Foodie Friday - Crockpot Chicken with Gravy

I love my comfort food! It warms me up in the winter, but there's no restriction on time of year for comfort food.  It tends to remind me of my Mom's cooking - which was amazing! 

Today's recipe is an easy comfort food meal - Crockpot Chicken with Gravy.  This recipe results in very tender chicken and makes its own gravy.  This is not a low sodium meal, so when we are going to have it we try to eat low sodium the rest of the day, but the taste and ease make up for that! 

Here's the end result over mashed potatoes:


As you can tell I like more of the chicken on just a little mashed potatoes!  There really are some potatoes under there :)

Here's what you need:

4 boneless, skinless chicken breasts
2 cans cream of chicken soup
2 packets chicken gravy mix

Put the chicken breasts in the crockpot.  Mix the soup and gravy mix together and pour over the chicken.  I sprinkle pepper on top of it all.  Cook on high for 4-6 hours.  When ready to eat, take a knife and fork and cut the chicken into bite-sized pieces in the crockpot.  Stir the chicken and gravy together so the chicken is well coated with the gravy. 

Serve over mashed potatoes, noodles, bread, biscuits, whatever you wish.   This makes a nice amount of the gravy, but if you want even more gravy you could add an extra can of soup and packet of gravy.  

I love meals like this, because if our schedule has us eating an hour or so later than expected, I can keep the cut up chicken on warm in the crockpot, and just put some beans or another steamed vegetable in the microwave when we are ready to eat.
