Foodie Friday! - Tomato & Sweet Onion Pasta Salad

After our first block party and having Patti's Kalua Pig, we were hungry for more of the tasty pork.  We made the shredded pork that following Sunday  - (see that recipe a few posts down - awesome and easy!) and I made this pasta salad to go with the sandwiches.




Tomato & Sweet Onion Pasta Salad


12 oz tricolor rotini

1/2 Vidalia onion, chopped

1/2 green pepper, chopped

1 cup grape tomatoes

1-1/2 c. fat-free sun-dried tomato vinaigrette (we use Ken's or Newman's Own Light)

Cook pasta.  Drain and rinse with cold water.  Combine onion, green pepper, tomatoes and salad dressing.  Add pasta.  Stir to coat.  Cover and refrigerate.


Makes 8 servings.


This is an awesome spring and summer salad and was a perfect pairing with the Kalua Pig  :)
