Foodie Friday! - Maple Glazed Salmon

I've decided to blog about one of my favorite things on Fridays  - foooood!  Each Friday I will post something food related:  recipes, kitchen tips, etc.  Some will be healthy, some not so much.  Some will be from my own cookbook, some from other websites, but the recipes I share will be ones we love.  None of my recipes will be time consuming, I'm just not that type of cook!

Today's Foodie Friday recipe is one of my favorite salmon recipes - Maple Glazed Salmon.   


Here's the recipe: 

2 - 5 oz. salmon portions
1/4 c. maple syrup
2 T. soy sauce
1/4 tsp. garlic salt
1/8 tsp. pepper

Put the salmon in an 8 x 8 baking dish.  Combine the remaining ingredients to make a marinade, stirring well.  Pour the marinade over the salmon.  Refrigerate, turning after 15 minutes, then marinate for another 15 minutes.  Bake the salmon  at 400 degrees for 20 minutes.  It will flake with a fork when done. 

We usually have this with a side of BirdsEye Steamfresh rice and vegetables - there are so many good ones to choose from, and they only take about 5 minutes in the microwave.  I usually pour the excess "sauce" over the fish and rice once plated.  This is quick and easy to make and the whole meal is ready in 20 minutes.

Salmon is high in omega-3 fatty acids, protein, minerals, and vitamins, with a 5-oz portion having about 300 calories.  I have been making this for several years and don't recall the source, so can't give credit to anyone specific.
