With Michael still on the mend my time in the kitchen is really limited so on those days when I am not organized enough to have something going in the crockpot, I am making easy, quick meals in the evening.
A friend of ours (a college student), told me how much she liked Foodie Friday and the recipes. I had to laugh because I thought, "Yep, my recipes are pretty easy... I can see how college kids would relate to them!"
So with that theme in mind, here's a super easy dinner we had this week.
Isn't there something about bubbly, melted cheese that just says yum??
Ravioli Bake
1/2 bag frozen ravioli (we used beef)
1 jar spaghetti sauce
4 ounces shredded Italian or mozzarella cheese
Spray an 8 x 8 glass baking dish with baking spray. Pour 1/2 jar of pasta sauce in the dish. Place frozen ravioli on sauce in a single layer (you will likely use less than half the bag of ravioli). Top with remaining pasta sauce. Spread to cover ravioli. Sprinkle with shredded cheese. Cover with foil and bake at 400 degrees for 30-45 minutes. Remove from oven when cheese has melted and sauce is bubbly.
We only ate about half of this. Adjust the ingredients as you prefer - less sauce, more cheese, etc. If you are going to make a larger batch just use a larger pan so the frozen ravioli is in a single layer to allow it to cook through.
Put some garlic bread in the oven the last 10-15 minutes the ravioli is baking, add a side salad and dinner is served.
Keeping it real......simple.
