This recipe is a day late for Thanksgiving, but hopefully it will come in handy for any late Thanksgiving celebrations or your Christmas dinner. This is my husband's favorite sweet potato dish. I love that I can get it ready ahead of time, refrigerate it, and put it in the oven 45 minutes before we are ready to eat.
Streusel Sweet Potatoes
1-1/2 cup mashed sweet potatoes
1/4 cup milk
1 egg
2 T. sugar
2 T melted butter
1/2 tsp cinnamon
1/2 tsp nutmeg
1/2 tsp vanilla
Mash sweet potatoes. (I use canned sweet potatoes and used my Kitchen Aid mixer and the flex beater. One large can of sweet potatoes equals the above.) Add remaining ingredients and blend well. Spoon in greased baking dish.
Streusel:
1/4 cup chopped pecans
1/4 cup brown sugar
1 T. flour
1 T. melted butter
Combine topping ingredients until crumbly. Sprinkle over sweet potatoes. Bake uncovered at 350 degrees for 30-35 minutes.
I baked this with a corn dish and green bean casserole at 375 degrees for about 45 minutes (I made a triple batch of the sweet potato dish), so the temperature is a bit flexible and just bake a little longer if doing a larger batch as I did.
