I recently blogged about the wonderful Cheez-It chicken recipe and that we had it with potato wedges. So today I am sharing the Potato Wedge recipe I use. Like the chicken, these are easy to make and require pretty much the same dipping process, just with different ingredients.
My husband loves potato wedges so I really should make them more often than I do. They are pretty much the ultimate side for about any meat entree.
Potato Wedges
1/3 cup flour
1/3 cup Parmesan cheese
1 tsp paprika
3 large potatoes, wedged
1/3 cup milk
1/4 cup melted margarine
Combine the flour, Parmesan cheese and paprika. Blend well.
Wash and wedge 3 large potatoes with the skins on. Place 1/3 cup of milk in a bowl. Line up your ingredients - milk, flour mixture, baking pan, and melted butter.
Dip potatoes in milk, followed by rolling the wedges in the flour mixture to coat well. Place coated wedges in greased 15 x 10 pan. Drizzle with 1/4 cup melted margarine.
They are now oven ready. Bake at 400 degrees for 20 minutes. Turn, drizzle with more melted butter, and bake another 20 minutes.
That's a bit of golden potato goodness right there!
Here's what I did differently:
I didn't grease the pan and used a glass baking dish.
I set the wedges in the pan skin side down so both cut sides were up. I did not turn or add a second drizzle of margarine. I used the 1/4 cup of margarine the first time around.
I sprinkled with pepper after drizzling the butter over them...because I absolutely love pepper!
I baked these with the Cheez-It Chicken at 375 degrees for 40 minutes and they were perfect, so if you are baking with something else the time and temperature are a bit flexible, just test with a fork to make sure they are tender before removing from the oven.
The 3 large potatoes go a longggggg way. I usually use 2 large potatoes for us and still have some left over.
FYI: I have made the Cheez-It chicken again with regular Cheez-Its. I definitely like it better made with the CoJack Cheez-Its. It gave them a bit more zip.
Some things just go together like Cheez-It chicken and potato wedges.
