Foodie Friday! - Spam Sandwiches

Okay, I know the slack I'm going to get for this recipe before I even post it.  Some will love it (my Spam brethren), some won't care for the recipe but will appreciate the sentiment behind it (thank you), and some probably won't even get past the title (Spamophobics).   


You know when we saw our 5-year-old grandson this weekend I made a comment that I "hated" something.  He very quietly said, "Grandma, you shouldn't say hate."  He was so right. 


It is hard to be corrected by a cute little 5-year-old.


So, be nice about this recipe. 


Here's the sentiment behind the recipe.  When I was growing up my mom would make these on Sunday nights.  It was as expected as watching Lawrence Welk on Saturday night (an-a-one, an-a-two)or having beef and pork roast for dinner on Sunday (they were so so wonderful).  I know I am dating myself, but those were the days!

I loved Spam then, still do. 

Did I mention I want to go to the Spam Museum sometime?


In the "olden days" the can had a key on the bottom that you used to open it.  It was pretty nifty! 


Lately I had been hungry for these and it had been years since I had them, so I decided to make some. 

So if you are a spammer like me, here's what you'll need:



Sunday Night Spam Sandwiches

4 Hamburger buns, halved
1 can Spam, diced

4 oz shredded cheese

1 stick margarine

pickle relish (optional)

Dice the Spam and put in a medium-sized mixing bowl. 




Add the shredded cheddar cheese (my mom used Velveeta - so if you are okay with even more preservatives knock yourself out!). 


Add one stick of melted margarine to the Spam and cheese mixture.  If you like pickle relish, add it in.  My mom always made some without the relish just for me :)


Stir together well and top hamburger bun halves with the mixture, mounding it on the bun.




 Bake at 375 degrees for 15-20 minutes - you want the bread to be somewhat crisp and the cheese melted.

If you didn't have the privilege of growing up with these sandwiches, try them.  


They are quick, easy, cheesy, and rich. 



So don your disguise, head to the store, and buy some Spam.


There's a reason Spam has been around this long!!
